Grain, Grain, Go Away
Grains have minimal nutritional value. They stimulate excess insulin production and contain antinutrients that compromise digestive and immune function, promote systemic inflammation, and inhibit the absorption of vitamins and minerals.
So why do we eat them? Grains are merely a cheap source of calories that are easily converted into glucose. They have formed the foundation of the human diet since the advent of civilization because they are easy to harvest and store. Today, they are processed into all manner of high-profit packaged, baked, and frozen goods, subsidized beyond reason by the U.S. Government and virtually force-fed to you and your family.
While highly refined "white" grains and sugar are universally agreed to be unhealthful, even the vaunted whole grains promote excess insulin production and have minimal nutritional value in comparison to Primal foods. Whole grains also contain higher levels of antinutrients than refined grains do, making them potentially more problematic to those who are sensitive.
But we need Carbohydrates to live! Good thing you can get them from eating beautiful, locally grown vegetables in abundance. As an added benefit, by filling up on more vegetables you’ll have less room for the ‘bad’ carbs that cause all the problems. What problems? All of them. The vast majority of chronic illnesses and physiological difficulties are directly attributable to overconsumption of carbs, particularly those from grains.
