So what are they? 
Garlic scapes are the curly, green flowering stalks that grow from hardneck garlic plants.  They have a mild garlic flavor and are quite versatile in the kitchen! Here are some popular uses for garlic scapes:
- Pesto: Blend garlic scapes with nuts (pine nuts, walnuts, or almonds), Parmesan, olive oil, and lemon for a bright, garlicky pesto. 
- Sauteed or Stir-fried: Chop and quickly sauté them like green beans or asparagus for a garlicky side dish. 
- Grilled or Roasted: Toss whole scapes with oil and salt, then grill or roast until tender and slightly charred. 
- Soups and Sauces: Use chopped scapes as a flavorful addition to soups, stews, or tomato sauces.
